Low ABV and incredibly crisp
The vines grow on loamy and clayey limestone soil
took place in a fiberglass cuve and from there it went into bottles
The qvevri was then closed and the new wine allowed to macerate for a month on skins
The grapes here come from the estate's youngest vines and are a mix of the three terroirs Hervé cultivates: sand and flint
2024 Kobayashi Syrah Sans Soufre, Washington, USA Quinta de Santiago Low ABV and incredibly crisp97% Syrah, 3% Viognier from WeatherEye Vineyard, located at the top of Red Mountain in eastern Yakima Valley. The Rhone varieties Travis and Mario source from WeatherEye are ungrafted, single stake trained, and planted at high density on rocky, fractured basalt soils. The wine was whole cluster fermented with ambient yeasts, and matured for 22 months in French oak (25% new) before bottling, unfined and unfiltered.
